Hi! Another busy day…Breakfast consisted of:
Whole Wheat toast with natural PB
And a Cortland apple
I made an open-faced apple/PB sandwich…delish! And a coffee, iced of course! (I just got really excited because I accidentally learned how to make my pictures bigger! Yay!! I made the Husband give me a high five 😀 haha, slowly but surely I will figure this whole blogging thing out!)
For lunch I had leftover soup and a slice of bread, which I didn’t have time to photograph.
Dinner, which I didn’t photograph either :(, was mini broccoli and cheese quiches, inspired by Caitlin’s dinner yesterday. Soo good! We also had some chicken, maple, and apple sausages that I picked up from the grocery store on Saturday….it was my first time trying these and they were really good too! They had chunks of apple in them and just a slight maple flavor…mmm. I can’t remember the brand though! Haha I’m really bad at this! I had two quiches, 1 sausage link, and a small glass of non-fat milk.
Before I started dinner I decided to go for a short walk to stretch my legs. It felt so good! I think I only went about a mile but it was really chilly and getting dark. I’m ready for the time change already! Although, I probably won’t be saying that when I lose an hour of sleep…My shins are feeling a little better today so I hope they are up for the 7 miles I have planned for this weekend! Only 4.5 weeks to go until the half! Woo hoo!

The Husband had to work late so dinner was put off for a little bit. The chicken noodle soup was delicious! I kind of just used what I had on hand- the cooked chicken, celery, carrots, onions, chicken broth and egg noodles. Also a little salt, pepper, and garlic powder to taste…love the colorful veggies!
We ate this with a slice of oatmeal bread from the bakery. I really should make some bread this weekend! Oh, and a chocolate chip cookie for dessert!
Back to work today! Very rushed this morning so breakfast was a piece of whole wheat bread (not even toast!) with natural PB smeared on it on my way out the door. And of course, my iced coffee from the coffee shop…I somehow always make time for this part! 🙂 Lunch was leftovers from last night, meatloaf and mashed potatoes…not exactly healthy or low-fat but it was quite good! My first time making it…success, I’d say!
I got home around 5:30 and since it was still light out, decided to go for a short run around the neighborhood (same 2.25 mile loop I ran on Sunday). It was chillier than I was expecting…sunshine equals warmth, right? 😉 Well, the shins are still giving me some trouble…
These may be the culprits!
I’m trying to convince the husband that I need new shoes…he’s not buying it! Maybe this weekend…this is getting frustrating! I stretched and iced so hopefully they start to feel better soon!
Off to make dinner! I’m throwing together a very simple chicken noodle soup using a routisserie chicken that I picked up on Saturday. Yum!
So I declared today a rest day as my shins have been throbbing since my 6 miles on Saturday. I did a very slow 2.25 miles yesterday and iced but I’m being extra cautious. A stress injury last year prevented me from running my first scheduled half marathon so I do not want a repeat of that!! I am signed up for the Great Bay Half Marathon in April so I only have about 5 weeks to go. I’m not really following a training schedule this time around (I followed Hall Higdon’s Novice half program last year) only because it has been hard to get out during the week (not enough daylight!). I try to get my mileage in Sat-Mon since I have those days off from work.
It was a rest day from exercise but was very busy otherwise! My brother-in-law is coming to stay with us on Wednesday so I had lots of cleaning to do! I love a sparkling house! It will last for about 2 hours. ..
