I made this salad on Monday for a Christmas party and have been munching on the leftovers all week, including for lunch today. Keeping all of the ingredients separate and combining right before serving keeps it crisp and fresh. Whenever our family gets together for a holiday, this is sure to make an appearance! We love it!
It is super quick and easy so it’s great in a pinch. You probably have all of the ingredients on hand! The bite of the vinaigrette pairs perfectly with the sweet candied pecans and the smooth feta cheese. Try it soon! 🙂
Mixed Greens with Feta Cheese and Caramelized Pecans
- 1 package of mixed greens
- Feta cheese, crumbled
For the Pecans
- 4 Tablespoons butter
- 1/3 cup brown sugar
- 1/2 cup pecans (I used crushed)
For the vinaigrette
- 1/4 cup olive oil
- 1/8 cup balsamic vinegar
- Italian Seasonings
To prepare the pecans, melt the butter in a nonstick skillet over medium heat. Add the brown sugar and combine. Add the pecans. Stirring frequently, cook for about 5 minutes or until mixture is caramelized. Transfer mixture to wax paper to cool. Once cooled, crumble into pieces and store in an airtight container until ready to use.
For the dressing combine the oil and vinegar. Start with the measurements above and then add more of each to your tastes. Sprinkle in the seasonings (again, the amount you desire) and whisk to combine. Refrigerate until ready to use.
Empty the greens into a serving bowl. Sprinkle the feta and pecans on top and drizzle with the amount of dressing you desire. Toss to combine and serve immediately.
